Illusen has decided to share two of her top-secret recipes with the Neopian Times so that pets all over Neopia can celebrate Illusen Day with some delicious baked goods.Chocolate Mint Swirl Illusen Cake This rich and decadent cake is perfect for pets that love chocolate and mint. This is great for dessert after a nice dinner. This recipe makes a large cake, so make sure you have a lot of people to share with! This is too much for one pet. Number of Servings: 16 large slices Prep Time: 20 minutes, Baking Time: 2 hours Ingredients Mint Cream Cheese Filling: 6 oz. Chokato cream cheese 1/4 cup granulated sugar 1 tablespoon Meridellian all-purpose flour 1 yellow Negg 1/8 teaspoon Snow Faerie peppermint extract 3 drops Earth Faerie green food coloring Chocolate Cake: 1 box Illusen chocolate cake mix 1/3 cup Meridellian all-purpose flour 1 cup water 1/2 cup Kau butter, melted 2 yellow Neggs Chocolate and Mint Glaze: 2 tablespoons semisweet chocolate chips 1 teaspoon shortening 1 cup powdered sugar 1/4 teaspoon Snow Faerie peppermint extract 1 tablespoon corn syrup 3 teaspoons water 1 drop Earth Faerie green food coloring Directions First, preheat oven to 325 F while preparing the cake batter. Grease and flour a 12-cup fluted tube cake pan. In a small bowl, beat the Chokato cream cheese with an electric mixer on high speed until it is smooth and fluffy. Beat in 1/4 cup of granulated sugar, 1 tablespoon of the Meridellian all-purpose flour, 1 yellow Negg, 1/8 teaspoon of Snow Faerie peppermint extract, and 3 drops of Earth Faerie green food coloring into the cream cheese until the mixture is smooth. Then, set this aside. In a large bowl, beat the Illusen chocolate cake mix, 1/3 cup of Meridellian all-purpose flour, 1 cup of water, 1/2 cup of melted Kau butter and 2 yellow Neggs with an electric mixer on low speed for 30 seconds. Then, mix on medium speed for 2 minutes. Pour this mixture into a cake pan. Spoon the cream cheese filling made in the previous step over the cake batter. Bake the cake for around 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool cake in the pan 15 minutes. Turn pan upside down onto a cooling rack or heatproof plate. Then, remove the pan and cool completely for about 1 hour. In a saucepan, heat the chocolate chips and shortening over low heat. Keep stirring frequently, until the chocolate chips are melted, and then set this aside. To make the glaze, mix 1 cup of powdered sugar, 1/4 teaspoon of Snow Faerie peppermint extract, 1 tablespoon of corn syrup, 3 teaspoons of water, and 1 drop of Earth Faerie green food coloring. This should make a thick glaze that can be easily drizzled over the cake. If the consistency is too thick, add 1 or 2 more teaspoons of water. Once the glaze ready, drizzle the glaze over the cake and immediately spoon melted chocolate over the glaze in a ring shape. Quickly pull toothpick through chocolate to make pretty swirls. Refrigerate the cake until it is ready to serve. After serving, store leftover cake loosely covered in the refrigerator. Enjoy and don’t eat too much at once! Illusen Frosted Cupcakes These cupcakes are small, sweet, and perfect for chocolate lovers. It’s great for snacking anytime during the day. This makes a lot of cupcakes, so bring them to school and work and share with your friends! 24 cupcakes are also too much for one pet. Number of Servings: 24 cupcakes Prep Time: 20 minutes, Baking Time: 20 minutes Ingredients Chocolate Cupcake: 1 box Illusen chocolate cake mix 1 cup Kau sour cream 1/2 cup water 1/4 cup cocoa powder, unsweetened 1/4 vegetable oil 3 drops Earth Faerie green food coloring 3 yellow Neggs 2 teaspoons vanilla extract Mint Chocolate Frosting: 2 3/4 cups powdered sugar 6 tablespoons cocoa powder, unsweetened 6 tablespoons Kau butter, melted 5 tablespoons evaporated Kau milk 1/4 teaspoon Snow Faerie peppermint extract 1 drop of Earth Faerie green food coloring Directions Before preparing the cupcake batter, preheat oven to 350 F. Beat 1 box of Illusen chocolate cake mix, 1 cup of Kau sour cream, 1/2 cup of water, 1/4 cup of unsweetened cocoa powder, 1/4 cup of vegetable oil, 3 drops of Earth Faerie green food coloring, 3 yellow Neggs, and 2 teaspoons vanilla extract in a large bowl with an electric mixer on low speed just until it is moistened. Scrape sides of bowl frequently while mixing. Then, beat on medium speed for 2 minutes. Once the batter is ready, pour it into 24 paper-lined muffin cups. Fill each cup until it is about 2/3 full. Bake for 20 minutes or until a toothpick inserted into the center of a cupcake comes out completely clean. While cupcakes are baking in the oven, prepare the mint chocolate frosting. In a medium bowl, sift 2 3/4 cups of powdered sugar and 6 tablespoons of unsweetened cocoa powder together, and then set this aside. In another large bowl, cream 6 tablespoons of butter until the mixture is smooth, and then gradually beat in the sugar mixture made in the previous step alternately with 5 tablespoons of evaporated milk. Blend in 1/4 teaspoon of Snow Faerie peppermint extract and 1 drop of Earth Faerie green food coloring with an electric mixer. Beat until the frosting is light and fluffy. If the consistency is not right, adjust it by adding more evaporated milk or powdered sugar. Take cupcakes out of oven and cool in the pan for 10 minutes. Remove the cupcakes from the pans and cool completely on a wire rack. Frost with mint chocolate frosting and decorate with twigs and leaves.
